Who doesn’t love a chewy fudgy vegan gluten-free brownie made in the air fryer? I teamed up with Ninja and they sent me their new Foodi Flip Oven Air Fryer to test out some classic vegan baking recipes. Brownies was the first recipe that came to mind and I haven’t shared a gluten-free version so away I went. I was absolutely blown away with how easy this oven air fryer was to use (and I would say that even if this wasn’t a sponsored post).
This recipe has been developed specifically for the Ninja iFood Flip Oven Air Fryer. These brownies are super fudgy and completely NOT cakey. They even have that beautiful shine on the top that brownie experts pride themselves on. So get baking and let me know what you think.
Gluten-free Flour Mix
- white rice flour
- almond meal
- xanthan gum
Recommended Oil
Canola oil is the best oil to use for brownies as it will create that shiny crispy top.
Recommended Chocolate
I highly recommend using vegan couverture chocolate for this recipe. If you use cheap cooking chocolate or chocolate chips the recipe will not work as these types of chocolate contain oil.
Tips For This Recipe
- Allow the brownies to set in the fridge before slicing otherwise they will fall apart
- Stick to the recommended baking time, if you over bake your brownies they will become too dense and hard once set
- Use vegan coverture chocolate
Vegan Gluten-free Brownies in the Air Fryer
- Total Time: 40 minutes
- Yield: 9 large brownies 1x

Description
Fudgy gooey gluten-free air fryer brownies
Ingredients
- 180 g quality vegan chocolate (not chocolate chips or cooking chocolate)
- 100 ml canola oil
- 100 ml hot coffee
- 185 g light brown sugar
- 2 tablespoons cocoa powder
- 135 g white rice flour
- 35 g almond meal
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- 1 teaspoon xanthan gum
Instructions
- Melt chocolate & pour into a large bowl. Add oil, coffee, sugar & cocoa powder, & stir with a whisk to combined.
- Add remaining dry ingredients & stir to combined.
- Line an 8-inch square tray with baking paper and pour in batter. Smooth out with a spatula so it’s even.
- Turn on your Ninja Foodi Flip Oven Air Fryer and select the ‘bake’ setting. Set to 180C/355F, preheat & bake for 20 minutes.
- Allow brownies to cool in the oven for an hour, then place in the fridge for an hour to set.
- Slice & drizzle with chocolate. Serve!
Notes
Make sure you’re using a couverture chocolate and not cooking chocolate. The brownies will become to oily if you do and will not set.
