Ingredients For Cakes
- 250ml vegetable oil
- 250ml Nature’s Charm Evaporated Coconut Milk
- 1 tsp vanilla bean paste
- 300g plain flour
- 2 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp sea salt
- 150g caster sugar
- 40g desiccated coconut
Ingredients For Soak
- 155g icing sugar
- 125ml plant milk
- 40g vegan butter, melted
- 3–4 drops vegan red food colouring
- 120g desiccated coconut
Instructions
Method For Cakes
- Preheat the oven to 165°C (330°F). Line a 9in square tin with baking paper & grease lightly with oil.
- In a small jug add oil, evaporated coconut milk and vanilla. Whisk to combine.
- Sieve flour, baking powder, baking soda & salt in a large mixing bowl. Add sugar & coconut. Whisk to combine.
- Make a well in the middle & pour in wet ingredients. Mix together.
- Pour into tin & spread evenly with a spatula. It will be a very thick batter.
- Place on the middle rack in the center of your oven. Bake for 27-30 mins, check with a skewer through the centre, if it comes out clean it’s ready.
- Let cool for 10 mins, then flip on a cake rake & allow to completely cool, then wrap and chill in the fridge for an hour.
- Remove from the fridge. Use a love heart shaped cookie cutter to cut out 9 heart shapes.
Method For Soak
- Add all ingredients, except for the coconut to a small bowl & mix until combined.
- Dunk each cake in the soak, then roll in coconut, completely covering all sides. Place on a cake rack to set. Serve!
