If you don’t know what a lamington is, it’s strictly Australian. It’s usually a vanilla cake shaped into squares and coated in an outer layer of chocolate sauce and rolled in desiccated coconut. The thin chocolate mixture is absorbed into the outside of the sponge cake and left to set.
I teamed up with Nature’s Charm to create my own special vegan lamingtons using their evaporated coconut milk. These lamingtons are a soft coconut flavoured cake, shaped into hearts, soaked in a pink icing and rolled in desiccated coconut.
I shaped these lamingtons using a simple love heart cookie cutter. You can also cut them into squares or any shapes you like.
