Vegan Coconut Lamingtons

Natures Charm shot 3 this recipe

If you don’t know what a lamington is, it’s strictly Australian. It’s usually a vanilla cake shaped into squares and coated in an outer layer of chocolate sauce and rolled in desiccated coconut. The thin chocolate mixture is absorbed into the outside of the sponge cake and left to set.

I teamed up with Nature’s Charm to create my own special vegan lamingtons using their evaporated coconut milk. These lamingtons are a soft coconut flavoured cake, shaped into hearts, soaked in a pink icing and rolled in desiccated coconut.

I shaped these lamingtons using a simple love heart cookie cutter. You can also cut them into squares or any shapes you like.

Vegan Coconut Lamingtons

Description

Cute pink vegan lamingtons for every occasions


Ingredients

Ingredients For Cakes

  • 250ml vegetable oil
  • 250ml Nature’s Charm Evaporated Coconut Milk
  • 1 tsp vanilla bean paste
  • 300g plain flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 150g caster sugar
  • 40g desiccated coconut

Ingredients For Soak

  • 155g icing sugar
  • 125ml plant milk
  • 40g vegan butter, melted
  • 3–4 drops vegan red food colouring
  • 120g desiccated coconut

Instructions

Method For Cakes

  1. Preheat the oven to 165°C (330°F). Line a 9in square tin with baking paper & grease lightly with oil.
  2. In a small jug add oil, evaporated coconut milk and vanilla. Whisk to combine.
  3. Sieve flour, baking powder, baking soda & salt in a large mixing bowl. Add sugar & coconut. Whisk to combine.
  4. Make a well in the middle & pour in wet ingredients. Mix together.
  5. Pour into tin & spread evenly with a spatula. It will be a very thick batter.
  6. Place on the middle rack in the center of your oven. Bake for 27-30 mins, check with a skewer through the centre, if it comes out clean it’s ready.
  7. Let cool for 10 mins, then flip on a cake rake & allow to completely cool, then wrap and chill in the fridge for an hour.
  8. Remove from the fridge. Use a love heart shaped cookie cutter to cut out 9 heart shapes.

Method For Soak

  1. Add all ingredients, except for the coconut to a small bowl & mix until combined.
  2. Dunk each cake in the soak, then roll in coconut, completely covering all sides. Place on a cake rack to set. Serve!
