Ah what can I say…. this is technically a donut and french toast in one. It’s great if you have left over cake and you don’t know what to do with it or if you’re feeling crazy indulgent and wanna make something crazy good.

French Vanilla Fried Cake
- Total Time: 25 minutes
- Yield: 5 people 1x
Ingredients
Scale
- Left over vanilla cake (approx. one layer of 6IN cake)
- Veggie oil for frying (1-2 cups)
- 100 ml coconut cream
- 1 tbs cinnamon
- 2 tbs vanilla bean paste
- 1/2 cup bread flour
- Vegan Fairy Floss (I use white Persian fairy floss)
- Vegan vanilla Ice cream (I use soy so good vanilla icecream)
- Vegan Sprinkles (I use Fancy Sprinkles)
Instructions
- Sieve bread flour and set aside
- Mix coconut cream, cinnamon, vanilla together in small bowl
- Cut cake into small palm sized squares or favourite shapes and soak in coconut cream until very wet then cover in flour
- Heat oil in a fry pan until batter sizzles when added
- Fry one piece of cake at a time
- Top with fairy floss, sprinkle, ice cream and serve

You can also drizzle with caramel sauce
